What do I need to do to avoid the various OOC pitfalls aside from never wearing a chest item?

God-mode, meta-game, and power play. On top of lore these are the three biggest pitfalls. Sometimes on part of the evil doer, sometimes of part of the community (Sorry guys.). People will get upset when you tell them 'I'm in disguise'.

What evil RP boils down to more than anything is OOC relations, it's sad but true. If you get people to accept your story, accept your RP, you can do just about anything.

You have to get used to people following you and never saying anything, as a habit due to a select few individuals (Even after asking them to speak with me when doing so /facepalm) I /who every zone I enter IC, if I feel like one of the high level rogues could be following me? I ask.

Meta: People are gonna' do it all the time. They'll tell you they can smell the shadow, smell the 'taint' (Whatever the hell that means, I like to think I bathe thank you!) so on and so on even though I look like every other Captain in the Regiment. I always find this funny because for a long time Stormwind's own higher ups have been corrupted, even something as awful as a Faceless one made it into the very high rankings of the Guard and no one noticed for a very long time.

God: You'll actually get this rarely, especially if you make it clear to others that you're looking for..'High brow RP?' I'm not sure how to phrase it. I've had people God-mode on my occasionaly but when I bring it up to them or their GMs OOCly usually that's it, and not another word is spoken about the situations. Don't be afraid to complain. If you have to die because someone wants to dodge a knife, in full plate, at six inches away, then you have a right to tell them 'Look, I don't really think that's right'. Get ready to take some hits, and get ready to have some friends willing to get your body and rescue you from the brink of death. But under no circumstances should you have a failsafe for dying, if you -die- that is on -you-. That is because you're not careful enough, want too much attention, or attract the wrong kind of roleplayers. An evil role-player should never have to 'come back from the dead' more than once.

PowerPlay: Sort of the same as above in terms of pitfalls, just keep an eye on what you do. This is mostly on the part of the evil player, not so much the community. We've all seen it before, demons engaging in brawls in the bar, mad 'old gods' destroying a raid of forty people, that grand and dandy Lich that can raise an army of hundreds of ghouls...which brings me to my next point.

An undead army would not be in hundreds or thousands. At most, maybe a couple dozen ICly, but if this is too much, I'll change it.

Death Knights have a hard enough time controlling -one- undead minion. And their 'army' which is about this size, is frail and fragile. They're dead, they're going to get taken out in a couple (If not one blow), keep in mind how much magic it takes to raise an undead, let alone control every aspect of it's being. It'd take months for anyone not dedicated to the practice to preform such a feat.

Dalavesta has personally only engaged in necromancy once in order to restore a member of her family. To do it she had to steal the life from multiple cultists, and drain them of a lot of the living years they have left. She didn't tell them, and even after it took weeks for the person in question to regain themselves.

It's a very complex process. Not to be taken lightly ._o

... Is it immoral to support the bad guys?

You know what, I don't even care.

At what level of intelligence and complexity must a sentient being have before it becomes "morally wrong" to eat them?

Let's start at Gnomes and see where we get from there.

Gnomes taste like rust and gasoline. I wouldn't do it if I were you.

Any Unholy DK worth their salt knows how to bring up a good undead minion. Before they got rid of some of our more entertaining skills, DK's had a wide variety of tools at their disposal to ruin someone's day in an RP fight.

The Knights of Menethil still remember that when an enemy goes down, you back out of range before it explodes. Good times.
